The Email Log lists all of the e-mail that is sent through Course Evaluations that does not cycle through the Group E-mail function.  The e-mails that appear here are e-mails that the CE Manager sends to a student or faculty member directly when they forget their password.  It also logs the system generated e-mails when testing the SMTP connection.
